2008 Ishtar Adelaide Hills Sauvignon Blanc

The 2008 vintage is my second making of an Adelaide Hills Sauvignon Blanc. Adelaide Hills is considered
the premier Australian region for Sauvignon Blanc.

Grapes were sourced from a small vineyard at Euchunga , where the elevation ensured cool conditions in what was a very hot vintage.

Grapes were harvested early February. After one hour of skin contact to add some complexity, the juice was separated from skins.

Fermented with cultured yeast EC1118 for 20 days, the wine was immediately bottled under the new NOVATWIST closure.
