2008 Ishtar Adelaide Hills Pinot Grigio

Sojourns to Italy whetted my appetite to make a Pinot Grigio. I went searching for Pinot Gris grapes in the cooler, elevated Adelaide Hills, and found the perfect vineyard in Lobethal. The vineyard, on a north facing slope is close planted with vertical shoot positioning(VSP) to maximise sunlight exposure.

Grapes were harvested late March and the juice separated from skins pronto, to avoid extraction of hard phenolics. The clean juice was cold fermented for 35 days then immediately filtered to avoid lees contact and bottled with the latest NOVATWIST environmental friendly closure.
